No anúncio anunciaram uma coisa, um curso lindo estruturado e com foco exato no que buscamos: técnicas de empratamento. Na prática só cozinhamos e empratavamos cada um como queria sem nenhum direcionamento e embasamento de food design, que era o que foi vendido.

Infelizmente compramos um curso de Food Design e nada do que estava na ementa de disciplina nos foi passado, nem mesmo o Chef professor na foto do curso era o mesmo. 100% dos alunos ficaram insatisfeitos e não quiseram continuar com o curso

Venderam curso de food design e na hora tivemos absolutamente nada disso. Uma turma composta apenas por profissionais da área em um curso de especialização em empratamento e o que fizemos? Cozinhamos o curso inteiro e depois casa um empratava do jeito que queria. Aula sem objetivo, sem foco, sem o conteúdo oferecido. Uma lástima

Péssima experiência, infelizmente. Há 2 meses atrás eu efetuei a matrícula na Les Chefs no curso de food design. No site, o prometido era um curso de especialização com foco em design e empratamento. A chamada do curso inclusive era “torne-se um food designer”. Foi prometido aulas com técnicas de empratamento, cozinha molecular, fotografia e marketing. E havia a foto do professor Luiz Perin na página, que tinha renome nessa área. Ao olhar toda a ementa, tive segurança de que seria um curso altamente qualificado e que justificaria o meu deslocamento até São Paulo por 4 dias. O que aconteceu: a escola retirou as aulas de fotografia e marketing com a justificativa de que não haveria tempo hábil. O que não fez sentido, visto que este curso tinha carga-horária maior em relação ao outro de 7 dias e ainda era mais caro. A única questão foi: não fui avisada disso na hora de efetuar a matrícula. Chegando na escola, além desta situação, me decepcionei com o curso de food design em si. O professor era outro, não era o Luiz Perin. Achei que iria aprender técnicas de empratamento como foi previsto na ementa, mas passei o dia inteiro pesando e picando ingredientes para fazer uma sobremesa. E o momento do empratamento em si durou em torno de 30 min e não houve explicações técnicas de acordo com o prometido na ementa do curso. Dava pra ver que o professor substituto entendia sobre sous-vide e técnicas de cozinha, mas não entendia nada sobre design. Tanto é que, quando eu questionei, ele mesmo disse que a parte de design “não era com ele”. O professor em si não teve culpa. Dava pra ver que ele era esforçado em ensinar e tinha conhecimento sobre cozinha moderna, porém não tinha sobre design e empratamento, que era o objetivo do curso. Deu pra ver que a escola o colocou em um curso sobre um tema a qual ele não tinha domínio. Procurei a coordenação do curso, questionei e pedi o meu dinheiro de volta. À princípio vieram com a justificativa de que aquele era apenas o meu ponto de vista sobre o curso, enquanto na verdade todos os meus colegas se sentiram lesados da mesma forma. Acabaram efetuando o estorno do valor que investi, porém fiquei com o prejuízo de tempo, além de passagens, hospedagem, transporte e alimentação, que somaram o equivalente ao valor do curso. Realmente foi uma perda de tempo e de dinheiro, além do desgaste emocional.
Bad experience, unfortunately. 2 months ago I enrolled at Les Chefs in the food design course. On the website, what was promised was a specialization course focused on design and plating. The call of the course was even “become a food designer”. Classes in plating techniques, molecular cooking, photography and marketing were promised. And there was a photo of Professor Luiz Perin on the page, who was renowned in this area. When looking at the entire menu, I was sure that it would be a highly qualified course and that it would justify my trip to São Paulo for 4 days. What happened: the school withdrew photography and marketing classes on the grounds that there would be no time. Which didn't make sense, since this course had a higher workload compared to the 7-day course and was even more expensive. The only issue was: I was not notified of this at the time of registration. Arriving at school, in addition to this situation, I was disappointed with the food design course itself. The teacher was different, not Luiz Perin. I thought I would learn plating techniques as stated on the menu, but I spent the entire day weighing and chopping ingredients to make a dessert. And the moment of plating itself lasted around 30 minutes and there were no technical explanations as promised in the course menu. You could see that the substitute teacher knew about sous-vide and cooking techniques, but he didn't understand anything about design. So much so that, when I questioned him, he himself said that the design part “wasn't up to him”. The teacher himself was not to blame. You could see that he was hardworking in teaching and had knowledge about modern cuisine, but he didn't have a knowledge about design and plating, which was the objective of the course. I could see that the school put him in a course on a topic he had no mastery of. I looked for the course coordinator, questioned and asked for my money back. At first they came with the justification that that was just my point of view about the course, while in fact all my colleagues felt wronged in the same way. They ended up refunding the amount I invested, but I lost time, in addition to tickets, accommodation, transport and food, which added up to the equivalent of the course value. It really was a waste of time and money, in addition to emotional exhaustion.
